Meatless Monday {1 year 9 weeks}

So we’re into 1 year 9 weeks of Meatless Monday… Into my 20th week of pregnancy too and waddling on 🙂

Here’s my  week in 4:
      1.  I have quite an immense to do list before the babies arrive, in the house the Nursery, Office & Hall, Landing and Stairs are all to be decorated as we won’t have the time, money or resource to do these things once they arrive so I figure the more we can get done now the better. I plan, once the painting is complete (at the beginning of October – local decorator booked) to work on picture/gallery walls for the Nursery (more info to come in Nursery Pinspiration blog post), a Wedding Wall at the top of the stairs, where I will finally print some of our wedding photos (3 yrs later!) and a Wanderlust Wall up the stairs, of all of our travels to date. All of these walls will be a mixture of art, photos and quotes, I just love the idea of them! But this means collating a lot of picture frames, ideally FOC or if not from charity shops, so I have my eye out, but this week I though I would take a punt and post on the village Facebook Page and see if anyone had any which they were looking to get rid of and a lovely fellow Mama-to-be came back to me to say yes she had quite a selection and it would save her a trip to the charity shop! 😀 So I picked up this fab selection from her all FOC and can’t wait to get going with this project. Also have my lovely friend Tuely posed with the Calligraphy skills to put me together some lovely quotes for the Nursery 🙂 Love it when a plan comes together.
      2.  This is my pregnancy pillow mark 2 and I think I am in love! So so much better than my first attempt bought on a whim on eBay with no research and soon after taken to the charity shop. This one is 5 star rated on Mothercare and really does have everything you need and want from a pregnancy pillow. “Unlike other pillows, DreamGenii offers gentle support for your tummy, back and knees without taking up most of the bed, allowing you and your partner to get a good nights rest. Its unique shape encourages you to sleep on your left side, in the recovery position, which, if used regularly from the second trimester, can encourage baby into the optimum position for birth. 3. EAT WELL FOR  LESS – is a brilliant BBC TV show which I have really got into this week as I caught up with the series I had on record. Where Master Chef’s Gregg Wallace and Green Grocer Chris Bavin go in each week to a new families home and look at the way they shop and then take them through how they can save them selves a ton of money and also waste a lot less food by changing their eating and shopping habits. Such feel good TV and they have now brought out a book linked below, which is once again added to my wish list 🙂

4. My week ended with a bank holiday weekend visiting our South African friends down in Salcey on the south coast. Whilst the boys camped I hung out with the girls and we had a lovely time, we were very lucky with the weather too in the main and this photo was taken as I walked down to the beach from my friend’s house and went for a paddle in the sea – shear bliss 😀

Right onto food…

Breakfast:

Granola with semi skimmed organic milk and tropical juice from the milkman.

Lunch:

Meze, low-fat yoghurt, pot mango and melon, an apple, mini Maryland cookies and a slice of delicious thanks to our very talented office baker Helen and one of these sweet treats brought back from Italy by my colleague Cris.

 

Dinner:

I was aware that I was getting a little dull on Meatless Monday dinners and so thought I would make the effort to cook a proper meal from scratch over the weekend and then heat it up on Monday, my meal of choice was Cheats Veggie Lasagna, please find recipe and photos below, along with a couple of photos of extras I also had for dinner. This was my first time of cooking it as was really delicious, I even gave leftovers to my hubby and he didn’t notice the lack of meat – so result all round. I still have a couple of leftover portions left so might even have another one for next weeks dinner too 😉

Easy Veggie Lasagna

Course Main Course
Cuisine Italian

Ingredients

  • 1 pack fresh lasagna sheets
  • 1 jar red sauce
  • 1 jar white sauce
  • 1 pack veggie mince
  • 1 handful spinach leaves (can be frozen or fresh)
  • 1 bell pepper diced
  • 1.5 onions diced
  • 1 handful sugar snap peas diced
  • grated cheese to put on top
  • sun dried tomatoes for decoration/ flavour on top
  • 1 splash olive oil for cooking
  • 1 tsp cumin powder
  • some Italian seasoning for each layer

Instructions

  1. Fry off onion, mince, and any other veg you wish to add in a shallow frying pan on a medium heat until it gets some golden colour in a shallow - ideally oven proof and hob proof pan (I use a le creuset shallow casserole for this and it's perfect 🙂 )

  2. Add red sauce and mix well along with cumin

  3. Split into 1/3 and place 2/3 in separate bowls ready for layering, leave 1/3 in the pan to use as your base layer

  4. Then add your spinach, some italian seasoning, then pasta sheets, then white sauce and grated cheese, then start again, until you finish off 3 rounds of layers

  5. Bake in the oven on 180'C for 20 minutes until golden and bubbling, then serve and enjoy.
